100g brown sugar
125g plain flour
125g “Crispy” Gaxure
5g raising agent
For the crispy Gaxure:
Stretch the Gaxure out on a silicon cloth, dry out in the oven for 3 hours at 80º or until it can be broken into pieces.
For the Cookies:
Cream the butter and beat together with the sugar to get a creamy mixture. Add the egg and continue to beat. Mix the flour with the raising agent and place half in the butter mixture.
Mix in the rest of the flour and the crispy Gaxure broken into pieces, make small balls with your hands and squash them slightly.
Place the biscuits on an oven tray, spaced out (as they will grow). Bake the biscuits for 10 minutes at 180ºC. Cool on a rack.
